Chocolate Coviglia Napulitana (for 4 people)
Ingredients:
2 eggs (separated into yolks and whites)
1 cup espresso
150 ml whipping cream
130 gr brown sugar
50 gr dark chocolate (75% or 90% cocoa)
Preparation:
Prepare the chocolate mixture: Prepare the espresso and pour it into a saucepan. Add the chocolate and 2 tablespoons of cream. Heat over low heat until the chocolate has melted, then set aside to cool.
Beat the egg whites: Beat the egg whites until stiff peaks form. Set aside.
Whip the cream: Whip the remaining cream (reserve a little for garnish). Set aside.
Prepare the crust: Beat the egg yolks with the sugar until light and fluffy. Fold in the melted chocolate mixture.
Mix everything together: Gently fold in the whipped cream, then fold in the beaten egg whites.
Freeze: Pour into dessert glasses and freeze for 5 hours.
Serve: Remove from the freezer 20 minutes before serving. Garnish with fresh berries (raspberries, strawberries), the reserved cream, cocoa powder, and chocolate shavings.
